eggHello Internet Friends. As many of you know I just started eating a variety of food again. I have Dysphagia and for years I have had a very limited diet. This was for a variety of reasons. In the past, being constantly sick with respiratory issues made my throat overly temperamental. When we tried pureeing before our equipment didn’t have the power to get foods to the consistency I needed. Who knew equipment was THAT important?  And honestly there is a huge lack of information on the internet about getting food prepared correctly. I mean my high school didn’t have “Home Ec. For People Who Can’t Swallow!”

Recently while messing around on the internet I looked up Dysphagia… Then Dysphagia recipes. There was very very little information. Sure the internet could tell me what Dysphagia was and even sell meals, but that was about it. I did run across a menu that included scrambled eggs and pancakes.

“What? I can’t eat those!” I searched and searched for a recipe on how exactly they were achieving the right consistency for dysphagia but there was never a recipe. After hours and hours of digging I finally found a very undetailed recipe and naturally no pictures so I could see these mythical eggs. Could eggs be possible again?

Me and Mom brainstormed and tried it out. There I was in egg bliss after going 10 long years without an egg. Even during hospital stays, with dietitians determining my meals, the consistency was never right, but we figured it out. Eggs, Pancakes, Cookies… delicious!

So here I am a week later with eggs, pancakes, Ramen noodles, rice, cauliflower and cheese all under my belt and still sad it took so long to get information. As soon as I tweeted something about my new found feasts I had a message from a friend with Dysphagia too. “Eggs? How?” I am not alone. So expect some recipes on here. No one should miss out on food they love! This is the internet, time to share the information!
