biscuits1Breakfast is the most important meal of the day and boy had I missed one of the best parts, Biscuits and gravy. I was excited when I saw this listed on a menu for dysphagia. I knew if I was going to succeed at this one, I needed a nice fluffy biscuit. I definitely found one! If you have dysphagia, this is how I put biscuits back to the table!

First, start off by making these easy and delicious 7 up biscuits.

Ingredients
  1. 4 cups Bisquick
  2. 1 cup Sour Cream
  3. 1 cup 7-up
  4. 1/2 cup melted butter
Instructions
  1. Pre-heat oven to 450 degrees F.
  2. Mix Bisquick, sour cream
  3. Add 7 up. (Dough will be very messy)
  4. Sprinkle additional biscuit mix on board or table and knead and fold dough until coated.
  5. Pat dough out and cut biscuits using a round biscuit or cookie cutter or glass.
  6. Melt butter.
  7. Cover top and bottom of each biscuit with melted butter.
  8. Bake in a 9x13 pan for 12-15 minutes or until golden brown.

Now that you have nice fluffy biscuits, it’s time to make them dysphagia friendly! I took of the crispy tops and bottoms and just used the soft fluffy center just to make sure the end product had no lumps or hard spots. With my dysphagia everything needs to be completely smooth.

biscuits3Once we had enough bread ready, we made the pepper gravy mix as the package instructed. You can definitely make your own gravy but we used this mix. When the gravy is finished, pour the gravy over the biscuits and mix it up to make sure the biscuits are nice and coated then let it set 5 minutes to soak up as much gravy as possible.

biscuits2After 5 minutes, put it in the food processor and puree it into submission! You can adjust the consistency by adding more gravy, milk, or water. In the end you should have a concoction that is completely smooth! After all this preparation you will probably want to microwave it a few minutes because warm biscuits and gravy are the best!
